Fewer than three percent of the nearly 30,000 restaurants approved by AAA are awarded this prestigious recognition from a panel of professional inspectors, the hospitality industry, and over 54 million AAA/CAA members.
The achievement comes at an opportune time as the restaurant recently hired Jerome Bondaz to serve as the new Chef de Cuisine. Chef Bondaz comes to Eden Roc at Cap Cana from Europe where he cooked in critically-acclaimed and Michelin-starred kitchens in Spain, Monaco, Switzerland and his native France. He will continue to create world-class cuisine that takes guests on a journey of the flavors and ingredients of the Mediterranean combined with local Caribbean elements paired with the finest French, Italian, Spanish, American and South American wines.

Up next for Chef Bondaz is to further develop the restaurant’s “Route de Bonheur” dinners by creating special five-course degustation menus each month that focus on a different cuisines around the world. He will also continue to lead interactive tastings of the restaurant’s collection of olive oils and vinegars from around the Mediterranean as an add-on experience available to groups staying at the resort.
