Punta Cana, DOMINICAN REPUBLIC – DATE – Mediterraneo, the signature fine-dining restaurant of Eden Roc at Cap Cana, announces the launch of an innovative menu created by recently appointed Sous Chef Alberto Garcia. He joins the exclusive, five-star Relais & Chateaux resort to showcase his versatility blending seasonal flavors and Dominican culture with his Mediterranean-influenced expertise.
Mediterraneo presents an unparalleled experience for culinary enthusiasts who appreciate the details in fine dining. Under the leadership of Executive Chef Gianluca Re Fraschini, Garcia has taken the initiative to experiment with unique flavors that delight the palates of all guests. The four-course menu can be enjoyed with an exclusive wine-pairing selected by sommelier Alessandra Poletti. The special menu can be enjoyed for USD $90 per person, USD $120 with wine pairings.
“I want to convey through my dishes the identity of the area, under the standards of Mediterranean cuisine, creating a mix of flavors of two perpendicular cultures that give reverence to avant-garde cuisine and new techniques,” Garcia said.
Garcia was born in Cadiz, Spain, and grew up in Sanlucar de Barrameda. He has always connected the ocean and gastronomy, having his first exposure to a professional kitchen at 22 years old under the hand of world-class “Chef of the Sea,” Ángel León, at seafood-centric Aponiente restaurant. After winning the first Michelin star there, Garcia decided to travel and expand his vision at different restaurants throughout Spain, including working at Chef Martin Berasategui’s restaurants in San Sebastian and Barcelona.
During a stint in France, Garcia worked as Sous Chef at La Loge, and two Michelin starred L’Atelier by Jean Luc Rabanel in Arles. He later returned to Spain to take over the kitchen of Gran Hotel Nagari’s Alameda Restaurant XXI in Vigo.
Eden Roc at Cap Cana seeks to show its classical and contemporary identity through fine taste for culinary delights and create a broader and experimental gastronomic culture in the Dominican Republic. Complementing the menu is an alluring ambiance; décor presents a subtle elegance — rich, yet simple.
